Sugar dosage 9g/l (Brut). Vinification according to the traditional method, aged for 36 months on slats in the cellar tunnels. This Blanc de Blancs with its exceptional taste and aromas is the result of the combination of a unique place, centuries-old know-how and the quality of Valais grapes.

It is also one of the TOP 10 best brut wines in the world and won a gold medal at the 28th International Comparison of the World's Best Chardonnays and a gold medal at the 19th International Comparison of the World's Best Sparkling Wines.

Within 30 years, the "Brut Millésimé" 100% AOC du Valais has become a reference in terms of quality and passion.

The ripe Chardonnay grapes, pressed without crushing or destemming, the slow foaming in the bottle, the 36-month ageing on slats in a wine cellar at a constant temperature and the careful riddling and de-stemming give the "Brut du Valais Millésimé" all the characteristics of a great sparkling wine.

Germanier - Cave du Tunnel

Founded in 1968 by Jacques Germanier, an oenologist, the Cave du Tunnel has developed and grown in perfect harmony with its time and its environment. With vision and a constant ear for the market and its consumers, it is now known and recognized at national and international level. This dynamic company was one of the pioneers for many wine estates, particularly in terms of diversification and the blending of noble grapes from Valais.

At the end of the 1980s, Jacques Germanier became a pioneer in Swiss viticulture when he launched a sparkling wine based on Chardonnay: Brut du Valais. In 1989, tunnels were dug into the rock in order to meet strict specifications and create a Brut that could be matured and stored under constant temperature conditions all year round. It had to be able to stand up to comparison with the best champagnes. And the many awards prove them right...

The sparkling basics of champagne

The unique, typical champagne flavour is largely due to the time-consuming méthode champenoise. The bottle fermentation method is copied all over the world, for example in South Africa as "Cap Classique", and Swiss sparkling wines, especially the more expensive ones, are also produced using the traditional bottle fermentation method.

The minimum ageing period for entry-level champagnes in the lower price range is 9 months. Premium champagnes mature much longer on their lees, for example the minimum prescribed maturation period for vintage champagnes is 36 months - and often goes far beyond this: 5 to 7 years of maturation are not uncommon for vintage champagnes from top producers.

Chardonnay

«Popular all-rounder»

Its cradle is possibly in Champagne, where it is also known as "epinette" or "epinette blanche". But Champagne and Burgundy still argue about the origin of this grape. It is the most widely cultivated white grape variety in the world. Around 1920, the grape variety was introduced to Valais and has been increasingly planted in Valais in recent years.

For a long time, Chardonnay was made into an expansive, ripe, slightly sweet wine. As tastes evolved towards drier wines, Chardonnay was harvested earlier and earlier to produce fresher wines with notes of white fruits and flowers. As in Burgundy, these wines like to be aged in oak barrels.
