Lafnetscha is as unconventional as his choice of partner... He loves hors d’oeuvres, sauerkraut, shellfish, spicy seasonings such as curry and peperoncini – or cheese and onion tart, which also goes perfectly with cholera.

Organically grown and matured in amphorae – a minimalist winemaking process that highlights the freshness, structure and original character of this rare Upper Valais variety.

Derived from dialect, "Laff nit scho" means "Don't drink it too young!" The young wine is very lively, while mature vintages reveal its great potential.

Here’s what Mike Kanzso has to say about this wine

Lafnetscha is the only indigenous grape variety in Valais. It is a very old variety of great cultural and historical significance. We produce just a few hundred bottles a year, so be sure to give it a try!

What connects us with this winery...

Sometimes it’s a small world… Years ago, we had the pleasure of catering Maria and Mike’s wedding reception. And it was only recently that we discovered their wines. We are all the more proud to now have them on our wine list and to be able to serve them to our guests.

M&M organic wines

M&M-Bioweine was founded in 2008 by Mike and Maria Kanzso-Rüdisühli. Together with their family members and friends, they cultivate plots in the Vispertal, Visperterminen and St. German on the Lötschberg Südrampe. The entire vineyard is cultivated and cared for according to federal organic guidelines. Their winery is the first certified organic winery in the Upper Valais and they specialize in old grape varieties from the Upper Valais and their organic cultivation.

After training as a winemaker and master winemaker, Mike Kanzso gained experience at various wineries around the world. These include Davaz (Fläsch), Stonyridge (New Zealand), La Torre Vini, Marcel Zanolari (Veltlin/Poschiavo, biodynamic), Manincor (Kaltern, South Tyrol, biodynamic), Chanton-Weine (Visp) and Cave du Rhodan (Salgesch).

Maria Kanzso-Rüdisühli grew up on a farm in the St. Gallen Rhine Valley with 11 siblings and learned about vegetable growing from scratch. After completing her commercial training, she went on to train as a medical masseuse and Qigong teacher. At the same time, Maria was one of the best sport climbers in Switzerland, a member of the national team and an active World Cup climber. They still explore the numerous crags in Valais today, as long as their work in the vineyards allows it. In the meantime, Maria has also trained to become a specialist in handling the vines and working in the cellar. She is also responsible for the beautiful garnishes that are served at tastings at the winery, as they come from their own garden.

Lafnetscha

«Unique and genuine valaisan»

Genuine Upper Valais plant! A cross between Humagne blanche and Completer/gross Lafnetscha. According to the latest research, the only grape variety born in the Valais. It produces complex wines that can be stored very well.

Derived from the dialect, «Laff-nit-scha» means that this wine requires longer ageing due to its considerable content of natural acidity and should therefore not be drunk too young. «Don't drink yet» or «Don't drink too young!» This relict growth was grown together with Gwäss. 

The wine is reminiscent of elderberry, lime blossom, bergamot and ripe bananas and it is idiosyncratic like its choice of partner: Hors d'oeuvres, sauerkraut, cheese and onion tart, shellfish.
