Nicolas Feuillatte Grand Cru Millésimé Blanc de Blancs 2012

Nicolas Feuillatte, Chouilly
Description (detail)

Awarded the Platinum Prize and 98 points by Decanter magazine. A Blanc de Blancs made exclusively from grapes from Grand Cru vineyards and matured in the bottle for at least eight years. Above all, however, it manages to give the sip a beautiful elegance which, combined with an important pleasantness, makes this Brut Blanc de Blancs a champagne that holds all the cards. The champagne produced by Nicolas Feuillatte combines the quintessence of Chardonnay: generous, fresh and fruity, but at the same time characterized by exceptional finesse. This is a fabulous Blanc del Blancs.

Impressively intense bouquet reminiscent of white star jasmine flowers, acacia, mint, lemongrass, apple, blood orange and some mocha and roasted almonds. A bit like a stroll through an oriental market or an orangery. The palate opens with a fine mousse, multi-layered, elegant and at the same time opulent with fine minerality. The juiciness is stimulating. An aroma of fresh meadow herbs, vanilla, pomelo, white currant, pineapple and subtle roasted aromas.

Traditional champagne method

The sparkling basics of champagne

The unique, typical champagne flavour is largely due to the time-consuming méthode champenoise. The bottle fermentation method is copied all over the world, for example in South Africa as "Cap Classique", and Swiss sparkling wines, especially the more expensive ones, are also produced using the traditional bottle fermentation method.

Champagne production explained in 7 simple steps - click here.

The minimum ageing period for entry-level champagnes in the lower price range is 9 months. Premium champagnes mature much longer on their lees, for example the minimum prescribed maturation period for vintage champagnes is 36 months - and often goes far beyond this: 5 to 7 years of maturation are not uncommon for vintage champagnes from top producers.
