The completely new way to enjoy champagne! Today, in the 21st century, Madame Pommery would probably create a champagne like the Pommery Royal Blue Sky. This reinterpretation of the finesse-rich classic from 1874 dares to take a step into the modern world of enjoyment. The elegant and balanced blend of Pinot Noir, Pinot Meunier and Chardonnay, typical of Pommery, presents itself demi-sec with a higher dosage, distinct sweetness and breathtaking freshness. Today, champagne connoisseurs consciously take the liberty of drinking the French classic in an unconventional way. For the Pommery Royal Blue Sky, our cellar master recommends voluminous glasses filled with ice cubes.

Spicy notes of dried figs and almonds merge with the scent of marzipan, freshly baked millefeuille, marshmallows and honey. Refreshing, stimulating citrus and spicy notes round off the fragrance. The fruity and floral aromas of ripe mangoes, boiled bitter oranges and white vermouth complete the typical freshness and spiciness as well as the particularly long-lasting finish of the Pommery Royal Blue Sky.

The sparkling basics of champagne

The unique, typical champagne flavour is largely due to the time-consuming méthode champenoise. The bottle fermentation method is copied all over the world, for example in South Africa as "Cap Classique", and Swiss sparkling wines, especially the more expensive ones, are also produced using the traditional bottle fermentation method.

The minimum ageing period for entry-level champagnes in the lower price range is 9 months. Premium champagnes mature much longer on their lees, for example the minimum prescribed maturation period for vintage champagnes is 36 months - and often goes far beyond this: 5 to 7 years of maturation are not uncommon for vintage champagnes from top producers.
