Promising dark robe with a violet shimmer in the glass. A generous and varied bouquet, from spicy to fruity to a subtle vanilla note. On the palate, the Cabernet Sauvignon is full-bodied and powerful.

Two wines in the family line are dedicated to Adrian Mathier - Diego Mathier's father. In addition to the Cornalin, the Cabernet Sauvignon also bears his name. As a doer who was not above any activity during his active time as a winemaker, he created and achieved an incredible amount in his life, mainly through hard physical work. He worked all his life and made such a decisive contribution that the wine shop can still present itself in its best light today.

Our story

That's why this winery is particularly close to our hearts...

Passion for wine and emotion - that describes Nadia and Diego Mathier very well in our eyes. 

We not only share the values with which they run their business, namely emotion, quality, tradition, sustainability and innovation, but also a personal friendship. During our holidays, we always enjoy two or three days in Salgesch at the Mathier family's B&B and we have already been lucky enough to enjoy a glass of Grand Armagnac vintage 1914 from their private wine cellar together with the whole Mathier family.

But there are many other stories to tell: The bottling of our anniversary wine from the barrique directly at our barn, a video shoot, dinners together in fine restaurants or at the Mathier family's home - where Fernando ate the best risotto ever... And we're sure there will be more stories to come... :-)

Adrian & Diego Mathier, Nouveau Salquenen

Ferdinand Mathier, great-grandfather of today's best Swiss winemaker of the decade, laid the foundations for the success of the family business now run by Nadia and Diego Mathier. As a dedicated vineyard inspector, he was already aware of the importance of the soil conditions, the vineyards and the microclimate in Valais at the beginning of the 20th century. In 1951, he pressed his first 12,000 liters of wine in the house where guests are now treated to regional specialties and, of course, exquisite wines from the Adrian & Diego Nouveau Salquenen AG wine cellar in the Barrique "Wine & Raclette" restaurant in the village center of Salgesch.

Adrian and Rosmarie Mathier, Diego's parents, played a pioneering role and presented their wines to countless people at numerous trade fairs in Switzerland. This was an important foundation stone for the upswing of the winery. Their tireless work was crowned in 1986 with the world championship title for the Œil-de-Perdrix.

Nadia and Diego have been running the company since 2001. With a great deal of passion and commitment, they have successfully developed the family-run business in the canton of Valais on the basis of continuity and sustainability in line with the company philosophy "Tradition, emotion, innovation and enjoyment - for generations". Countless international and national awards, including Best Swiss Winemaker of the Decade and three-time Swiss Winemaker of the Years 2018-2011-2007, as well as more than 1000 gold medals for their wines are impressive proof of this.

And perhaps the best news of all: in a wine world that will be increasingly characterized by female influences in the future, Nadia and Diego Mathier have already laid an important foundation stone for the successful continuation of the Mathier family's traditional business in their marriage with their five daughters and their future families and will continue to provide people with countless moments of pleasure with their wines in the future.

Cabernet Sauvignon

«The most widely cultivated wine variety in the world - and also the most famous»

The Cabernet Sauvignon grape variety enjoys a high reputation worldwide and is considered by many wine connoisseurs to be the best for red wines. It is not for nothing that it has the status of «Cépages nobles», which means that it can rank among the noblest grape varieties. Due to the phenols contained in the seeds, the variety is excellently suited for barrique ageing as well as for long bottle ageing.

Cabernet Sauvignon is a natural cross between Cabernet Franc and Sauvignon Blanc. It is native to the Bordelais region, but is successful worldwide, and in the recent past has increasingly been grown outside Europe as well. Even outside its homeland, the variety retains its individuality and character. The terroir has little influence on the taste promise of Cabernet Sauvignon red wine. However, the craftsmanship of the winemakers has a lot to do with the bouquet and structure.
