The harvest took place on September 13 and 14, 2022. Great ripeness of the grapes. They were destemmed but not pressed. The pre-fermentation maceration and fermentation lasted 27 days. Tasting determined the pressing date. Maceration in barriques and 12 months of ageing before blending, followed by a further 6 months of ageing in stainless steel tanks. 1/3 new barrels. Malolactic fermentation in barriques.

Benoît Dorsaz Viticulteur

In 35 years of professional experience, Benoît Dorsaz has paved his way in the Swiss wine landscape. His wines are a reflection of what he loves: clarity, elegance and precision. People are at the center of all his efforts.
Benoît and Maryline attach great importance to the social role of viticulture, in particular by offering optimal working conditions. Since 2003, the couple have rejected all proposals to expand their vineyard. They prefer to do a little better rather than more and more.

Sensational wines are produced at the highest Valaisan level on the five-hectare family estate. Benoît Dorsaz took over the winery in 1986 and has been producing fantastically dense and impressively complex wines ever since. The winery has been certified organic since 2016 and the entire farm is cultivated biodynamically. This cultivation method strengthens the vitality of the plant and the soil. However, it also requires a strong personal commitment on the part of the winegrower: there is no patent remedy, but only an adaptation of the cultivation method to the grape variety, the soil or the location: permanent greening, mechanical soil cultivation or a mixture of both techniques are different methods that Benoît Dorsaz uses to cultivate his plots.

The sites for the indigenous grape varieties Arvine, Cornalin and Humagne Rouge were selected empirically. The experience of the old winegrowers is very valuable to Benoît Dorsaz! The preservation of the dry stone walls, which bear witness to the courage and skill of our ancestors, is also particularly close to his heart. These walls are an important part of the landscape and contribute to the ecological diversity of the wine-growing region by providing shelter for a whole small world of insects, plants, reptiles and birds. At the Domaine des Follatères and Plamont in particular, important work has been undertaken to preserve and promote these habitats.

Cornalin

«Hell wine»

Cornalin, also known as «hell wine», is an old native grape variety that was very common in the old days. The people of Valais called it the Landroten. Research has shown that it was renamed Cornalin for marketing reasons - in fact a variety of the Aosta Valley, but where it no longer occurs. The fact that Cornalin d'Aoste is called Humagne Rouge in Valais adds to the confusion that sometimes surrounds the biggest red wine in the Alps. 

But the «hell wine» is rightly named. It has a dark ruby red colour, a fine fruity bouquet and it surprises the palate with somewhat wild and spirited tannins that round off harmoniously over the years. A characterful and original wine for lovers.

Cornalin is late-ripening, sensitive and capricious in production, which is why it was almost abandoned in the middle of the 20th century. Fortunately, thanks to the patience and tenacity of a few visionary winemakers, we can still enjoy it today! In its youth, it is at the peak of its fruitiness, but it also develops very positively during a few years of ageing: its fire becomes tamer, it takes on a remarkable patina of finesse and nobility, and it moults into the ideal companion for strong meat and game dishes.
