Almost everything as usual:
The grapes (Sylvaner, better known as Johannisberg) come from the vineyards around Salgesch. The must is fermented as usual, matured in the cellar and monitored by the cellar master. A classic Johannisberg, just as we know it. At the end, an additional process step is added: the alcohol is removed without heat using a particularly gentle, filtration-based process. This preserves the structure and bouquet of the wine. The result is an alcohol-free wine that delights both the nose and the palate: The result is a modern wine: fresh and inviting on the nose; slender, lively and vibrant on the palate, with notes of lemon, green apple and a hint of lime blossom.

To be honest, the move to alcohol-free wine was anything but a matter of course for us. But those who know us know that we like to move with the times and, preferably, stay one step ahead. That's why we are proud to once again take on a pioneering role. With Sylvaner Zero, we are continuing on our path: step by step, open to new ideas, without excluding anyone. Because those who understand wine as a ritual and a joy of life should be able to experience this pleasure even without alcohol.

Our specially developed filtration-based method does not use heat and removes the alcohol particularly gently and slowly. This preserves the structure, bouquet and depth of the wine. The result is alcohol-free wine that impresses the nose and palate.

Cave du Rhodan

Ahead of its time by tradition. The Mounir family has been following this guiding principle at its Cave du Rhodan winery in Salgesch since 1962. Today, Olivier and Sandra are the third generation to run the certified organic family business with a spirit of innovation, vision and passion.

With a true pioneering spirit, the family is always trying out new things and has been committed to biodynamic cultivation for many years. Sustainability is understood comprehensively as part of a holistic approach that combines ecological, social and intergenerational responsibility. It is not only about what the vineyard gives, but also what can be given back to it.

In 2022, the family business celebrated its 60th anniversary. It can look back on many successes and achievements: the world championship title in 1972, the Grand Cru concept, the successful and disciplined implementation of biodynamic viticulture in recent years and the title of Swiss Winery of the Year 2022 underline Cave du Rhodan's commitment to quality and pioneering spirit. 

The Mounir family is passionate about the finesse of vinification and bringing out the typical characteristics of the grapes in elegant wines. These values form the ideal basis for a joint product with Amesco, enabling this very typicality to be experienced in a non-alcoholic version.

Johannisberg

«The Sunday wine of the Valais»

Johannisberg: This is what the Valaisans call their Sylvaner, which originally comes from Transylvania. After Chasselas, Johannisberg is the most widespread white grape variety in our region.

It is an ideal accompaniment to asparagus, poultry or fish in sauce. The Johannisberg develops its outstanding qualities on dry, gravelly soils, which it finds on selected slopes, especially in the Chamoson region. It is characterised by its varietal, charming flavour, with nuances of herbal tea and a seductive background of fruit and almond aromas. Its complexity, richness and ageing potential, well over twenty years, are incredible!

In the past, people in Valais drank Fendant during the week and Johannisberg on Sunday. The longer, the more the Valaisans treat themselves to a glas of Johannisberg during the week...
